This wine was made from grapes infected with Noble Rot (Botrytis). The grapes were hand picked at the beginning of winter, well after harvest was completed.
On arrival in the winery, Eveline stomped on the bunches with her own feet, left them to soak for 24-hours and then transferred the bunches to a pneumatic press for a gentle press cycle. Fermentation took place in a mix of stainless steel tanks and small French Oak Barriques.
Exquisite aromas. Rose infused tea, mandarin peel, poached apricot, cumquat, caramel.
The palate exudes musk and spice. Honeycomb. Concentrated but at the same time fresh. A beautifully balanced "Wee" Beauty with 168 grams residual sugar and good acidity.
TOP TIP: Serve chilled with foie gras or terrine, as an aperitif.
