Select rows, low yield, wild ferment, time on lees (~9-months), malolactic fermentation and a total of 12-months in 225 litre French Oak Barrels. Barrel selection is key, only older barrels are used.
What results is a wine that is exotic, intriguing, integrated, opulent and thought-provoking. Wild flowers, wild herbs, grilled apricot, frozen mango, dried dates, nutty, crème brûlée, passion-fruit pulp, brioche, baking bread, sandalwood...it goes on and on! Very limited production.
